Our extra virgin olive oil comes from the Spanish Matarranya — where the ancient kingdoms of Aragón, Catalonia and Valencia meet.
At this historic crossroads, the landscape has changed little through the centuries. The region has never been flattened, irrigated or industrialised.
Its steep terraces, fragmented plots and remoteness have preserved an older way of farming — producing distinctive olive oil in small batches, with a clear lineage from origin to harvest and pressing.
Many of our trees are centuries old - some over 800 years - cultivated on a small scale for generations.
Our groves are planted mainly with Empeltre and Arbequina olives, on remote terraces that often cannot be mechanised.
These are not industrial plantations. The trees depend entirely on seasonal rainfall, shaped by wind, altitude, and mineral-rich soils.
We farm according to tradition — in harmony with this ancient place.
Our olives are harvested from single groves with most pickers using handheld poles to strike the branches. The falling olives are gathered in ground nets before being carried away in small batches.
Within hours of harvesting the olives are taken to our local mill and cold-pressed to ensure the finest full flavour.
Like fine wine, the oil reflects its terroir and the character of the year. Each harvest carries the imprint of the season — rainfall, sun, wind and the moment the olives are gathered.
Green and black Empeltre olives, Aragón’s traditional variety, give Three Kingdoms its balanced freshness and gentle fragrance.
The result is a recognisable house character, with subtle variation from one harvest to the next. Olive oil from this region is prized and used daily in Michelin-starred restaurants locally and beyond.
2026 Tasting Notes
Clean and smooth on the palate, with gentle sweetness and balance. Aromas of ripe fruit lead into notes of nuts, sun-dried tomatoes and Mediterranean herbs.
For cooking
Three Kingdoms oil has a naturally high smoke point, making it ideal for frying potatoes, eggs, meat and fish, and for preparing traditional Spanish sofrito — the slow-cooked base of many Mediterranean dishes.
For finishing
To experience the full flavour of the raw oil, drizzle generously over salads, mix into dressings and pour onto toasted bread with garlic and tomato — a simple yet delicious Mediterranean staple.
